What the tour covers

The fully guided distillery tour lasts about 90 minutes. You start with a welcome cocktail, hear how the gin is made, and see the lab where founder Dr Ulrich Dyer uses cold distillation and microwave extraction rather than a traditional copper still. It ends with a tasting of the whole Symphonia range, poured as signature serves with local mixers and garnish. Because of the tasting, the tour is for over-18s only.

The story

About Woodlab Distillery

Woodlab Distillery opened in August 2020 and is led by Dr Ulrich Dyer, a chemist by trade, with Fiona Dyer. The name reflects the approach: Dyer treats gin-making as science, using methods such as cold distillation and microwave extraction rather than a conventional pot still.

The flagship Symphonia Spirits range has won awards and leans on local provenance, most notably the Armagh Bramley apple, a Protected Geographical Indication ingredient grown in the orchard county next door. The visitor side, the tours and gin school, lets people see that process up close and taste the results.
